When I proposed on the Facebook page a small file on the centrifuges, the thumbs rose to approve this decision but I was made very clear "And the juice extractors!" For me the juice extractors and the centrifuges, it was a little bit the same thing. I did not see the difference well so I conducted my little investigation on the characteristics of these two devices. How to choose between the two? How to extract the substantial marrow from it?
Steam or screw juice extractor: what is it?
Under this designation, there are really two objects which, indeed, fulfill the same function: extracting fruit or vegetable juice. First there is the steam juice extractor, well known to all jam makers. It is a pot resembling a couscous maker since it has several floors. The process is quite simple: the lower stage containing water will be heated until the formation of vapor. This vapor will burst the cells of the fruit or vegetables contained in the upper floor which will then "spit out" their juice collected through a pipe. The steam juice extractors make it possible to make jellies, juices (vegetables, fruits and herbs), syrups. Finally, be aware that there are certain models of electric steam juice extractors.
The advantages of the steam juice extractor
-The price : we can find a steam juice extractor from 35 € making it the most economical way to get juices compared to a screw juicer or juicer. Even if the first centrifuges are also at this price, it is better to opt for a steam juice extractor which will, in my opinion, be much less fragile and more resistant. -The amount : at once, you can extract the juice from a large amount of fruit or vegetables. This system is therefore particularly recommended for people with fruit trees or who can obtain fruit and vegetables at low prices. -The conversation : as it heats with steam cooking, the juice is sterilized. The disadvantages of the steam juice extractor
-Preparation time : it takes between 30 and 50 minutes to obtain its juice which is not long in itself but seems interminable compared to the immediacy of the centrifuge or the screw juice extractor. Another element to take into account, the juice that comes out of the steam juice extractor is boiling, so it is not consumable at the time. -Loss of vitamins and minerals : even if steam cooking is the sweetest there is, any heating irreparably causes a loss of vitamins and minerals. -No citrus juice : citrus fruits are much too delicate to extract their juice by steam, so it is not advisable to obtain their juice by this means.
The unresolved question
With a steam juice extractor, it is possible to collect the fruit pulp in the appliance to make fruit pastes , compotes or ice cream and sorbets. Unfortunately I have not managed to know if this pulp recovery for this use is specific to the steam juice extractor or not. The unresolved question is therefore: can we make, for example, fruit pastes with the "waste" of a centrifuge as with the steam juice extractor? If anyone knows the answer.
The screw juice extractor
The screw juice extractor is therefore the other extractor. This time, there will be no cooking but a crushing of the molecules of fruits and vegetables thanks to the rotational movement of one or more screws. Comparable in size to a centrifuge,the device is easy to use : fruit, vegetables, herbs and even seeds are inserted through a chimney above the appliance and the screw and a sieve will extract the juice on one side and the pulp on the other side which will come out dry. More often electric, there are nevertheless manual juice extractors.
The advantages of the screw juice extractor
-The gentle method : the gentle rotation of the screw extractor is the sweetest method which is to extract the juice because there is no cooking (even the centrifuge heats the food with centrifugal force). The result is that you get a juice that best retains vitamins and minerals, with the same speed as a centrifuge. -Juice recovery : we consider that a screw juice extractor recovers between 10 and 30% more juice compared to a centrifuge. -The noise : compared to a centrifuge, a screw juice extractor is much less noisy since the motor must act smoothly.
The disadvantages of the screw juice extractor
-His price : an electric screw juice extractor is expensive to buy . Count between 300 and 600 €. At this price, you nevertheless have a fairly versatile tool since it can also prepare soups, purees, seed butters, compotes, bases for sorbets and ice creams and even pasta. Today, we see that juice extractors have become more popular and that more mainstream brands like Moulinex offer screw juice extractors: the Infiny Press Revolution is indeed a cheaper screw juice extractor (count all similarly € 250) but also less versatile than its more expensive counterparts. -The preparation : if you observe the screw juice extractors compared to the centrifuges, you will notice that the entry chimney is much narrower. So this means that compared to the centrifuge which can, in some cases, obtain a juice with a whole apple without cutting it, you will first have to cut your fruit into small pieces to pass them through the screw juice extractor .
The centrifuge: another juice extraction technique
The centrifuge is the best known model in our kitchens. If he knew how to seduce a large number of people, it is above all by ease of use . The method this time consists in using the centrifugal force which will come to crush the fruit or the vegetable against a very fine sieve which will separate the juice and the pulp. In a few seconds, you can easily obtain a fruit or vegetable juice.
The advantages of the centrifuge
-Ease of use : with the XXL fireplaces that equip the latest centrifuges, it has become very simple to compose your morning fruit juice. No need to cut your food, you put everything directly in the machine without asking questions except for citrus fruits which you have to peel the skin. -His price : there is something for all budgets (but pay attention to sustainability anyway) from € 30 to € 300.
Disadvantages of the centrifuge
-The noise : the more radical method of centrifugal force generates a lot of noise, in any case superior to the other two devices (fortunately it is fast). -The interview : if a good number of centrifuges have ended up in the bottom of a cupboard, it is because of their cleaning. You could spend more time cleaning your sieve than drinking fruit juice. Fortunately today, centrifuges offer much easier sieves to clean than at Philips. -Loss of vitamins and minerals : the heating generated by the centrifugal force and the crushing would lead to a loss of vitamins and minerals. The juice would oxidize more easily than with other methods. -Non-conservation : this is the device that will store your juice the least well. Logically you should consume it immediately after extraction.

Finally the centrifuge will appeal to those who want a good fresh fruit juice quickly in the morning without worrying (especially since cleaning is now easier than before).
